It is okay to vent. You must be very frustrated. But, until one of you is prepared to get help, because it is your environment too, things will not be easier. You cannot fight this battle alone. You can move out, eventually but for now, you need outside support. It is a mental disorder. It is treatable, but takes time and a professional who knows about the disorder. There are also professional organizers who specialize in this, besides psychologists.

My mom was a hoarder too up until she passed away a few years ago. Do you have any siblings? Does your mom ever leave for days at a time? I would suggest if she ever leaves to get a dumpster and you and whatever people can muster up, just start dumping stuff. Be careful of anything that has real value. Everything else, just dump. If she never gets psychological help, she will never change, but at least you can start clearing the area a bit. Having that much crap around really prevents people from thinking clearly. I feel your pain. Good luck
